Course description
In this interdisciplinary and research-oriented Master’s degree program, we focus on imparting knowledge about the properties, production processes, and various applications of enzymes and microorganisms in the food industry. You will gain biochemical methodological skills to purify and characterize enzymes, understand enzyme kinetics, immobilize enzymes, and work with the expression and mutagenesis of recombinant enzymes. Additionally, you will develop microbiological expertise in managing pathogens in food production. The study subjects include enzyme kinetics, enzyme purification, enzyme immobilization, recombinant enzyme expression, and mutagenesis. The program also covers microbiological techniques for handling foodborne pathogens.
